This dish is not only limited to shrimp but also crabs and clams. You can add the veggies of your choice and have them with any variety of rice ( Sticky rice goes best with this ). This recipe has a sweet and spicy taste to it and Oh how I love the little surprise of the smoked sausages!!

The Memory behind this Seafood Boil Recipe

I and my husband love to try a variety of recipes. He is the more choosey one though, but my tastebuds are always welcoming new flavors. One day when I had some shrimp in my fridge and he asked me to make the same old boring recipe. However, I was so fortunate to have stumbled upon this seafood boil recipe. Well, it was not all to my taste so I twerked with the recipe to make my own version of this seafood boil. My husband absolutely loved it!!

Recently I and my friends happened to be at a bucket seafood restaurant and they made the exact same sea boil. I was kind of proud that I could make it since my friends love that gravy so much. I promised I would make it for them sometime.

Some recipes come into your life for the good. This is my go-to recipe when I’m bored of making the same dishes all over again. We love it as a family and it’s a favorite of the kids. Seafood Boil

Ingredients

  • •1KG Shrimp (Cleaned and with kernel)

  • •3-4 Small Potatoes

  • •2 Corn cobs

  • •3 tbsp Kashmiri chili powder

  • •2 tbsp pepper

  • •2 tbsp thyme

  • •2 tbsp oregano

  • •1 big lemon

  • • 2 sticks of butter (500g)

  • •3 onions

  • •1 big China garlic

  • •1 tbsp sugar/ Jaggery (Optional)

  • •Salt to taste.

Directions

  • Boil water Fill a large stockpot with 4 quarts of water. Boil the potatoes and keep aside when almost done, then add in the shrimp and boil till cooked.
  • I like to remove the shrimp heads and boil them in the water as well.
  • Separately fry the onions and garlic in melted butter.
  • Once translucent, add in the herbs and seasoning and fry for 5 mins.
  • Add in the shrimp broth and a Maggie cube and mix thoroughly.
  • Added in sugar if required.
  • Add in Siracha Sauce for a more spicy gravy.
  • Mix till the gravy is thick. Added Juice of 1 Lemon to the gravy.
  • In another skillet boil the corn and cook.
  • Add the shrimp, potatoes and corn into the gravy and cook on slow flame for 15 mins.
  • Serve Hot.

Notes

  • Water: I normally start with hot water since it will reach boiling point faster.
  • Red onion: Any Onion will do but red onions have a little sweet taste.
  • Garlic: Using fresh garlic is important for the flavour and avoid using dry garlic powder.
  • Old Bay seasoning: I have linked the seasoning recipe or you can use chilly powder, pepper powder, oregano, thyme
  • Thyme: 2 tsp dried thyme may be used as a substitute.
  • Potatoes: You can use any size but you need to cut them down to about 1 1/2-inch chunk. Petite can be left whole.
  • Salt and pepper: Add to taste, just remember there is already salt in the seasoning blend.
  • Corn: Corn on the cob is my absolute favourite in this recipe
  • sausage: If you can’t find Pork/ Beef sausage another type of smoked sausage will work fine.
  • Shrimp: I prefer to use freshly caught prawns and I make sure to clean them on my own for hygiene’s sake.
  • Unsalted butter: If you are adding salted butter make sure to adjust with the salt
  • Lemon: Lemon
  • Parsley: 1 Tbsp of dried parsley may be used as a substitute.
  • Possible Variations
  • You can add a can of beer to the broth.
  • Peel shrimp or leave unpeeled as preferred.
  • Add other herbs to the water mixture such as bay leaves or parsley.
  • The mixture can be finished with Siracha upon serving.
  • Make your own homemade seafood seasoning (in place of the Old Bay).
  • You can add other seafood such as crab, lobster or clams.
  • Additionally add any colourful veggies such as green beans, carrots, cauliflower
