Kori Roti a traditional Mangalorean chicken dish. Cooked in coconut gravy and poured on a readymade crisp rice wafer is a dream of a Mangalorean. This dish consists of two parts, the chicken in coconut gravy and the most amazing crispy rice wafers. Made as a Friday in catholic Mangalorean homes, this dish is pure joy.

The main step behind an amazing chicken coconut gravy is the roasting of all the spices. The next main ingredient is the coconut milk – Roce as it is known in Konkani. There are many coconut milk powders available in the market but the more fresh the Roce is, the better the curry tastes. (Incase you are going for a coconut milk powder – Maggie Coconut Milk Powder is the closest to fresh Roce)

The Roti, without which this dish is incomplete is normally bought at any store in Mangalore. If you live in a different city or country you can have the gravy with Neer Dosas, Idlis, appams and so on. But If you actually get your hands on this Roti, don’t forget to try it.

The Memory Behind this Kori Roti Recipe

We have all grown up eating moms home cooked food. Nothing beats her cooking and we truly miss it when we are away. I remember those days when I just entered college and I had to live away from my parents, facing every obstacle college had in store for me.

At the end of the day, I would dream about the food mom would have made for me and the comfort that was associated with it. I realized the value of her food. As I grew older and got married, I was expected to be in the place of mom. My husband expected me to cook the dishes that his mom cooked for him as a child. It took me some time to get here and share this recipe with you

A little about my hubby, he is a die-hard fan of Kori Roti. When ever we travel back to the Middle East he doesn’t fail to pack at least 20- 30 Packets of Roti. The most surprising part is that he manages to finish all of it in a span of 2 months. How you may ask? He need not eat it only with chicken curry but he’ll even have it with fish curry, sambar or any gravy in general.

Chicken in Coconut Gravy with Crispy Rice Wafers – Mangalorean Kori Roti

Ingredients

  • Spice Blend/ Masalas
  • 3 tbps -coriander seed

  • 2tsp jeera(cumin)

  • 20 pepper corns

  • 12 cloves

  • 3sticks – cinnamon

  • 4 cardamom

  • 8 small chilies

  • 12 big chilies

  • 1/2 tsp methi (fenugreek)

  • Other
  • 1 lime sized tamarind

  • 4 big onions

  • 10 cloves garlic

  • 3 tomato

  • Coconut milk (3 Cup)

  • Coconut grated (2 cup)

Directions

  • Roast all the ingredients for the masala separately
  • In a pan heat oil and and fry half of the onions and grated coconut till it’s is brown. Add turmeric at the end
  • Grind the roasted masala and keep separately
  • Fry the remaining onion in little oil and then put tomatos. After fried add the chicken and cook half
  • Grind the grated coconut and fried onions along with the masala and add coconut milk and tamarind water
  • Add the whole mix to the half cooked chicken.
  • Cook till chicken in cooked completely
