The Memory Behind this Pancake Recipe

I have always loved bananas, but my keto diet doesn’t allow me to have them. I still get them for my husband, and I try my best to feed my family healthy food. But even if there are fruits right in front of them, they always go looking for the junk. The bananas are over-ripe and no one wants them after that. One day I decided to mash the over-ripe bananas and add them to pancakes. Trust me they turned out delicious and my family kept asking for more. It’s a fun way to experiment and you can add many more fruits and see how it turns out.

Banana Pancakes Recipe

Ingredients

  • 1/2 cup fresh milk

  • 2 ripe bananas, mashed

  • 2 cups all-purpose flour (maida)

  • 1/2 tsp salt

  • 3 tsp baking powder

  • 2 eggs, beaten

  • 1 tsp Butter, melted

  • ½ cup Sugar

  • vegetable oil for frying

Directions

  • In a bowl, blend the milk and bananas and keep aside. Sift in the flour, salt, and baking powder. Carefully mix in the eggs, sugar and butter.
  • In a pan heat the oil on medium flame.
  • Carefully place a spoonful of the mixture into the pan until cooked. Continue to shallow fry the batter till cooked on one side.
  • Flip the pancake and continue to cook.
  • Flip the pancake and continue to cook.
  • Remove the pancakes and drain them on a paper towel.
  • Serve with maple syrup. Lots and Lots of Maple syrup.
